STABILIZING EMULSIFYING BASES for FRUIT Ice-cream mixes

Ingredients

dextrose, dehydrated glucose syrup, milk proteins, thickeners guar and carob bean gum xanthan gum, acidifier citric acid, maize starch, flavourings, salt.

Use mode

100 g Fruit CR/100, 320 g sugar, 1 litre water. Mix sugar and Fruit CR/100 and pour the mixture in water at room temperature while whisking. Let it rest for at least half an hour before batch freezing.
